Before the industrial revolution, floor malting was the traditional way of producing malt. Malt producer use a wooden malt shovel or a special iron-wrought rake to turn the grain manually very often. For its a lot of physically demanding jobs and climatic limitation, not possible in Summer, traditional floor malting was mostly replaced by industrial malting procedures today.
During the 1870’s, two malting engineers Galland and Saladin developed pneumatic malting technology and invented malting drum and Saladin box. It achieves to operate malt production year-round with good temperature control. These systems also show such savings in manpower and increases in malt output than traditional floor malting. Saladin box has the design of rectangular container with vertical screws. The malting drum were developed by Galland with gentle turning. The turning machines are simple, while it needs more transmission equipment and complex logistics , which makes it not suitable for very large scale production.
By the 1960s, circular germination and kilning vessels were developed and there is no practical limitation on size for these vessels, which made tower malting a practical configuration. It has high degree of automation and nice environment of technology control. It is small in covered area, simple in transmission, but the building cost is high. For very large scale production, tower malting system is the preferred configuration. Take the comprehensive cost into consideration , you can choose tall tower, half tower, or flat tower.
